Sweet Spot
An Interview with 24 Carrots Catering

Tell us a little about how your company got started and what the future brings:
In 2004, chef-owner Norm Bennett channeled his passion for culinary excellence and experience in both European and American kitchens into 24 carrots catering and events, where his elevated standards made the perfect foundation for success. His background is heavily infused into event menus, where fresh ingredients and memorable cuisine is top priority, and many of his secret recipes are long standing client favorites. Over the years, 24 carrots has built a stellar reputation based on our honest approach to business and unwavering commitment to excellence. We refuse to compromise on quality and our friendly, team-driven culture complements our award-winning food. We’re proud to have earned both the respect of our peers and the continued business of our loyal customers. Even as we’ve grown into an award-winning industry leader, 24 carrots has stayed true to our values as a family-owned business. Everything we do centers around our passion for bringing people together and creating unforgettable memories. We treat everyone like family, because for us, it’s all about personal connections. The friendly people on our team are genuinely interested in getting to know you and building friendships that continue long after your event is over.

On-trend food ideas for 2017 weddings:
Small Plate Tasting Menus
Vegetable Ash Ravioli: Osso Buco, Port Jus, Parmigiano Reggiano
By definition, a tasting menu allows a fuller spectrum of cuisine. We’re expecting a shift in prioritizing the dining experience for guests, and multiple small plates retains excitement at the table.

Plated Dessert
Salted Caramel Chocolate Bar
Nutella crunch, bitter hazelnut biscuit, dark chocolate sabayon mousse, and sea salt caramel cream, draped in Nutella ganache, chocolate pralines, and raspberry champagne reduction.
We’ve been fans of dessert stations the past few years, but with couples becoming more aware of food presentation, an impressive plated dessert to end the meal is a sure way to top off the culinary crescendo.

Fusion Foods
Halo Halo Dessert Station
With a rising appreciation for cultural cuisine, couples are incorporating their heritage into menus. This halo-halo station takes a traditional Filipino dessert and combines it with the format of a modern ice cream bar, making it appealing for guests of all ages.

Our specialty is:
We pride ourselves in being accessible to our clients. We’re not a big conglomerate that churns out cookie-cutter parties with no regard for your wishes and desires. And we’re not a small mom-and-pop shop that lacks the resources to ensure your event runs smoothly. 24 carrots is right in the middle – the sweet spot that provides you with the utmost personal attention and unlimited possibilities for your one-of-a-kind occasion.

Our food philosophy:
To create and inspire. It is the mission of 24 carrots to create remarkable experiences throughout Southern California by offering the finest quality foods and providing unsurpassed personalized service, driven by our passion for life’s special occasions.

Favorite cocktail hour appetizers:
With over 100 hors d’oeuvres gracing our menu, this is where our chefs get to play and our clients love getting to infuse their personal style and setting the tone for their wedding day! Some of our long-standing favorites are classic go-tos, such as our Stuffed Artichoke Hearts (with manchego, sun-dried tomato, balsamic, and Meyer lemon) or our Baklava Chicken Lollipops (with honey, pesto, and pistachio). But some of our playful items like the Ahi Taco or a Coconut Grilled Cheese (with lime-poached jalapeno) add some personality and a ton of flavor to each celebration!

Three trendy ingredients for 2017:
Poke. Squash Blossom. Hatch chile.

What is the best approach to serving food for specialty diets?
Whether it’s a simple adjustment or having a completely gluten free, vegan menu, specialty meals are a part of our standard service to ensure that you’re celebrating to your fullest party-potential! Depending on what restrictions your guests may have, we are able to easily adjust many of our main menu items. Some common menu modifications include: cheese on the side, eliminating nuts, etc. However, for the cautious hostess, we also do have a dedicated vegan and vegetarian menu, offering a couple dozen hors d’oeuvres, salads, and entrees that are pre-designated vegetarian or vegan without any amendments. It is also essential to distinguish whether a guest has an allergy, or a preference (i.e. gluten), so we may prepare accordingly. On your event day, we’ll use your notes to address each guest’s allergy (and they’ll thank you for being so thoughtful!).

How can couples use food to wow their guests and make them feel special?
Meals are not just meant to be eaten. They are meant to be experienced and shared. With flawless service and picture-perfect cuisine, we cater to make your memories unforgettable. Because we can picture perfect.

What is your single biggest crowd-pleasing wedding menu item?
A perfectly prepared filet mignon will never go out of style. This time-honored classic is synonymous with elegance and luxury, no matter what the wedding trends may be.

Love Story:
Since they both love cats, Eric planned on incorporating their cat into their proposal. Eric trained their cat, Pepper, to bring the ring to Paula once she arrived home to a room decorated in flowers and candles. The training was successful for over a week – until the day of the proposal. On the proposal day, Pepper decided not to cooperate. Eric found himself chasing the cat around for the ring while Paula was standing in the middle of rose petals, but in the end, the proposal happened and she said yes.

Love Note:
Coincidently, Paula and Eric were in the same fourth grade class, and when looking back, found themselves only two people away from each other in their fifth grade class photo. Yet, they didn’t remember each other. It took Paula moving away for middle school and ten years until they met again.
